Pregnancy brings with it the most absurd cravings and sensations for expectant mothers. With your hormones all over the place, all you want to do is get your hands on the things you crave and hog them for as long as you want. Not all these cravings tend to be healthy for you and/or growing child. It is this time that you need to be particular about eating right; but eating right does not mean eating boring food! Try out these highly nutritious and delicious meals.
Stuffed Acorn Squash with White Beans, Mushrooms and Quinoa
The stuffed acorn squash is rich in nutrients that are great for pregnant ladies, and it is simple enough to make too. Cut a medium-sized acorn into half, spray it with cooking spray after removing the seeds, and then bake for 45 minutes or until tender at 375°. While your squash cooks, sauté chopped mushroom, chopped onion, and white beans with a clove of garlic in some olive oil until the mixture softens, and a cup of cooked quinoa. Take the squash out and stuff in the mixture; top it with parmesan cheese and you’re good to go.
Nachos
We know, you’re probably thinking how this junkiest of all junk food could in any way be a healthy snack for you. We tweaked it a bit by using the low-fat versions of cheese and yogurt. Take an ounce of corn chips and layer them with kidney beans, chopped olives and shredded low-fat cheese. Bake or toast in an oven until the cheese melts. Top it with finely cut lettuce, chopped tomatoes, salsa, and some no-fat Greek yogurt.
Parmesan Chicken Tenders with Marinara Dipping Sauce
Pregnant women are required to consume a minimum 60g of protein daily on average. This parmesan chicken recipe is loaded with protein. Preheat your oven to 475°. Take about 5 ounces of chicken tenders; dip them in 2 egg whites, then crumb them in whole wheat bread meshed with parmesan cheese, oregano, dry mustard and some garlic powder. Bake them, sprayed with cooking spray until chicken is cooked (normally 15 minutes). Serve with sweet potato fries and steamed broccoli sprinkled with olive oil and a bit of lemon juice.
